These recipes have been collected by family and friends for many years.  I can remember my Grandmother "Mawmaw" formally known as Etta Rogers making many of the recipes listed.  Some are so old they don't have specific instructions.  I've found listings such as moderate oven, no mixing instructions, etc.  Feel free to send me an email if you have any questions and/or comments.  If I can't answer your question, I'll do my best to find someone in the family who can.

Jalapéno Corn Casserole

1 C. Uncooked Regular Rice
1 Medium Onion (Chopped)
1 Medium Green Pepper (Chopped)
1 C. Chopped Celery
½ C. Margarine (Melted)
1 Tbsp. Sugar
1 to 2 Large Jalapénos (Finely Chopped)
2 Cans Cream Style Corn
1 C. Shredded Cheddar Cheese (Mild)
Cook rice and set aside. Sauté onion, bell pepper, and celery in butter. Combine rice, vegetables, and rest of ingredients except cheese. Bake 30 minutes at 350° then add cheese on top and put back in for 10 more minutes.

Mexican Chicken Casserole

1 Medium Onion (Chopped)
1 Can Condensed Cream of Mushroom Soup
1 Can Wolf Chili
1 C. Chicken Broth
1 C. Green Chilies
1 Chicken (Cooked and Boned)
1 King Size Fritos
½ lb. Cheddar Cheese (Grated)
Mix 1 layer fritos, 1 layer onions, 1 layer cheese, 1 layer chilies, 1 layer chicken. Mix chili, soup, and chicken broth. Pour over ingredients as you mix them. Top with cheese and bake at 350 for 10 minutes.

Rice and Broccoli Casserole

1 Pkg. Frozen Broccoli
½ C. Onion
½ C. Celery
1 Can Cream Mushroom Soup
1 Small Can Carnation
1 Small Jar Cheese Whiz
1 C. Minute Rise (Cooked)
Cook broccoli and mix with rest of ingredients.

Tuna Casserole

1 Onion (Sautéed)
1 Pkg. Macaroni (Cooked and Drained)
1 Can Tuna
1 Can Mushroom Soup
Salt and Pepper to Taste
Cheese (Grated)
Mix all ingredients except cheese. Put in casserole dish. Top with grated cheese and bake at 350° for 20 to 30 minutes.
